Smoked Salmon Dip

I found this recipe on and fell in love with it. I am a huge fan of smoked salmon (or salmon in general), and I’m always up for trying out new recipes.

– 8 ounces cream cheese, at room temperature
– 1/2 cup sour cream
– 1 tablespoon freshly squeezed lemon juice
– 1 tablespoon minced fresh dill (I used dried)
– 1 teaspoon prepared horseradish, drained
– 1/2 teaspoon kosher salt
– 1/4 teaspoon freshly ground black pepper
– 1/4 pound (4 ounces) smoked salmon, minced

A few changes: I also some of the reviews that people had written, and almost everyone recommended to double the amount of salmon so that the cream cheese/sour cream taste wasn’t so overwhelming – so I did. I also added extra pepper, dill, lemon, and horseradish (I used almost 1.5 tablespoons), since these are flavors that I really enjoy. I think that really improved it. I still thought it tastes too creamy when I was done with it, but after leaving it in the fridge overnight it was absolutely delicious! Definitely make this the day before serving it!

I don’t have a food processor, so I mixed it all by hand. If you shop at Kroger I would recommend buying the store packed smoked salmon. It is delicious and much, much cheaper. The brand names were $6 for 4 ounces while this was $4 for about 11 ounces! I simply pulled the salmon apart by hand.
After leaving it in the fridge overnight, the dip has become a bit more pink, and the delicious salmon taste has spread to the rest of the mix. Some people said they liked it better without the sour cream, though.
I eat my salmon dip with only a little bit of cracker, hehe. Also, if you want to omit the crackers for a low-carb meal, use thick slices of cucumber instead. I haven’t tried it, but it sounds really good.

A Healthy Diet

We came home to a completely empty fridge yesterday, so grocery shopping was the first thing on our agenda. Now that Christmas is over and we’re back home I need to get back to eating healthy again (which for me means being back on a lchf diet). Even though I tried, last year wasn’t half as healthy as I wanted it to be. Snacks, candy, and alcohol found it’s way into my system a bit too often. So I’m working on some new resolutions for 2013, which will include more workout and healthy, delicious food.
To start out I wanted to make a couple of things that would stay fresh in the fridge for a few days. It’s so much easier to keep myself from snacking when I have a prepared dish waiting for me. First I made a vegetable salad and a smoked salmon dip, and tomorrow I’m going to whip up a big batch of curry chicken salad. They are all great for breakfast, lunch, or dinner.
Ah, I really do love this salad. You should try it out if you’re looking for a healthy side dish.

Gina Tricot – 81 Alexis

When we came home last night I found Victoria’s Christmas gift in the mail – and it was perfect! It was a gorgeous black lace dress, homemade reusable makeup pads, and a nail polish. It is a shiny purple, full of glitter, and perfect for new years eve. I didn’t even have to clean up my cuticles when I was done, the polish went on just the way it looks in the pictures.
I’ve never actually tried this brand before, but I already want more colors.
What do you think? It even has a little tint of red in it. I love it.

Pure Ice – Taupe Drawer

I can’t believe I haven’t tested this polish before now. I really love it! So cute and subtle that it could go with any outfit (it’s feminine without being “in your face” pink). Pure Ice had actually been planning on discontinuing this color in 2013 but, after getting a ton of complaints, they changed their mind and it will instead be renamed 966 Absolutely Marvelous. So it’s not going anywhere!
I couldn’t completely capture the correct nuance, but I’d say it’s right in the middle of these pictures. The flash made it a little too baby pink, while without it the color looked too dark. But you get the idea.
It goes on easy, but since I prefer thin layers I had to use three of them for complete coverage. When i was done I used a layer of OPI’s top coat, and I’m pretty happy with the result. What do you think?

Casual Thursday

Right when I say that I’m not taking outfit pictures while I’m on vacation, I go and change my mind. It’s nothing fancy, but I figured I shouldn’t wear sweatpants to the mall… And I feel like you can throw on a cute blouse with just about any outfit and automatically upgrade your look. I actually found a light purple on at JC Penny today that would have been perfect for spring, but I forced myself to walk right past it. Maybe later.

I really like the light outside – it’s so bright and sunny you can hardly tell that it’s freezing.
The only thing I’m missing is some more leaves and color. Virginia is so gorgeous during spring/summer!
I almost wouldn’t mind living here myself, hehe. I mean, look at this huge back yard!
Oh well, back to the outfit. It was way too cold to go anywhere without a jacket, so I threw on my huge “Norway jacket” (as Andy calls it), which could keep me warm in the middle of a snow storm.
